Diabetes Friendly Entree Recipe - Old Fashioned Barbecue Chicken
Ingredients:
- Cooking spray canola or olive oil
- 12 boneless, skinless chicken breasts
- 1/2 cup white vinegar
- 2 12-ounce cans of tomato puree (no salt added)
- 1 medium onion, finely chopped
- 6 tablespoons spicy mustard
- Juice of 1 lemon
- 1/4 cup sugar substitute
- 1 dash hot sauce (optional)
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon black pepper
Directions:
Prepare the barbecue grill.
Make the sauce:
- Simmer tomato puree and onion in a covered saucepan for five minutes.
- Add the mustard, lemon juice, sugar substitute, seasonings, and vinegar.
- Simmer uncovered for eight minutes until the sauce thickens.
Cook the chicken:
- Spray chicken breasts with cooking spray and rub them with ground black pepper.
- Place chicken evenly on the hot grill.
- Cook for 20 to 25 minutes, turning frequently.
- When chicken is nearly done, brush both sides with barbecue sauce.
- Continue to grill until the chicken is done (no pinkness).
- Transfer to serving platter and spoon the remaining sauce over the chicken.
